Announcing the introduction of U.S. pedigree domestic Wagyu Beef in October, BOA Steakhouse is serving this beef for the first time outside of Colorado. Emma Farms in Aspen’s Roaring Fork Valley is the only ranch in the nation to raise this unique pure-bred herd of United States Wagyu that contains at least 98% Wagyu genetics. The breed is celebrated for its intense marbling and fat dispersion which adds extraordinary depth of flavor and places it in the ranks among other culinary delicacies. The cattle, which have been serenaded by the Emerson String Quartet, among other world-class musicians, are 96% grass- and hay-fed, producing beef that is high in Omega 3s and 6s and free of any hormones or antibiotics. BOA’s chefs will season the Wagyu only with coarse sea salt and freshly ground black pepper, to enhance the natural flavors and guests will have the option of ordering the Wagyu by the ounce ($18 per ounce), with a minimum order of three ounces.
