The winning combo for Spring: Mixologist Billy Ray, Ciroc Vodka, and well-loved actor, David Arquette’s Bootsy Bellows on Sunset Blvd.

Mixologist Billy Ray began across the pond from the USA in London. Working his way through mixology in the ranks of wine bars, studying cocktail books, and and working with other top, creative mixologist, Billy adds his own style that is everything cocktail service and a bit of personal style, attitude, and happiness all shaken in to one delicious libation. “I believe bartending has nothing to do with me and what I want. It’s about what the guest wants,” shares Billy. “We would be nothing without our guests.”

  • Relish over Chef Ricardo Zarate’s Peruvian version at Mo-chica where he serves up the dish with rocoto hollandaise and asparagus on top of a toasted Enligsh muffin and a choice of bacon or smoked salmon, available Sunday from 10:30 a.m. – 2 p.m.

  • Enjoy Tortilla Republic‘s TR Benedict with poached eggs, chopped bacon, arugula, and hollandaise sauce on manchego scones with cheddar breakfast potatoes at the West Hollywood Modern Mexican Grill & Tequileria’s weekend brunch offered from 11 a.m. – 3 p.m.
  • Delight in Chef Stephan Kalt’s Mediterranean-influenced adaptation, The New Orleans, which is poached eggs, artichoke hearts, and hollandaise on top of a toasted English muffin at  Caulfield’s Bar and Dining Room, located at the Thompson Hotel in Beverly Hills, available weekends from 10 a.m. – 3 p.m.
  • Diners can also get a healthy version of the dish at Greenleaf Gourmet Chopshop‘s Century City and Costa Mesa locations. Executive Chef Kristi Ritchey serves up her signature Eggs Benedict on a pretzel bread bun with poached eggs, turkey breast, truffled spinach, caramelized onions, cheddar, and whole grain mustard hollandaise. The dish is available daily at Costa Mesa and Monday through Friday at Century City from 8 a.m. – 9 p.m.

In case you find yourself travelling over the national food holiday weekend, do not fret! Diners can enjoy Chef Jeff Bolton‘s southwestern spin at Kachina in Westminster, Colorado, which features chorizo, jalapeno, béarnaise, Indian fry bread, poached eggs, and a red chile drizzle or visit Chef Danny Trace’s Brennan’s of Houston in Texas where he serves an Eggs Sardou with artichoke bottoms, creamed spinach, poached eggs, and hollandaise sauce as part of a three-course brunch menu.

A casually elegant dining room and stunning wraparound outdoor patio sets the stage for an incredible lunch with friends, afternoon happy hour, or dinner seven days and nights each week. Master Sommelier George Miliotes hand-selects the award-winning wine list and in addition to incredibly refreshing menus, Seasons 52 offers signature cocktails, nightly live entertainment and a breathtaking, earth-friendly plant wall, called the Living Wall, on the outdoor patio.

THE MENU: Executive Chef Partner Jessica Koine and her culinary team clip herbs from the interior Herb Garden, use herbs from the patio’s Living Wall and frequent the Santa Monica Farmers Market every Wednesday to select produce being grown for Seasons 52 by 10 regional farms. These combined ingredients are featured on the starting Autumn Dinner Menu in dishes such as BBQ Chicken with organic field lettuce, fresh corn, roasted red peppers, pumpkin seeds and crumbled blue cheese; Grilled Boneless Rainbow Trout with dill-roasted potatoes, baby carrots, dill mustard and broiled lemon and Piedmontese All-Natural Bone-in Strip Steak with roasted asparagus, cremini mushrooms and roasted potatoes. Menus offer a variety of crispy signature flatbreads, small and entrée salads, vegetarian dishes, a choice of fish and seafood and poultry and meat dishes. Seasons 52’s famous Mini Indulgence desserts including Raspberry Chocolate Chip Cannoli and Pecan Pie with Vanilla Mousse are the way to end a satisfying meal or a great treat for shoppers who need a sweet reward for no more than 475 calories.

WINE & LIBATIONS: The handsome wine Chateau designed by Seasons 52 Master Sommelier George Miliotes houses part of the restaurant’s 2,000-bottle collection. Its award-winning wine list features a diverse international selection from 13 different countries, including over 52 choices offered by the glass, as well as organic wines and MS George Miliotes “Drink Them Before They’re Famous” list.

Cocktails are expertly prepared with a culinary approach, combining fresh ingredients with high-quality spirits. Seasonal creations include: Superfruit Martini (Veev Açai Spirit, POM pomegranate, blueberry juice and organic agave nectar) and Raspberry Steaz Mojito (Atlantico Platino Rum, Steaz Raspberry Sparkling Green Tea, muddled lime wedges, mint leaves and organic agave nectar). Premium spirits as well as local, imported and premium American beers are served.

THE INTERIOR SETTING: Just inside the entrance and near the private Chef’s Table is a glass-enclosed 140-plant Herb Garden with its own cooling system, temperature control, water filtration system and 600-watt grow lights. Throughout the day, chefs are clipping herbs to incorporate into their cooking. The design of the main dining room, inspired by the work of Frank Lloyd Wright, is natural and organic with autumn ledgestone and solid Honduran mahogany throughout. Live entertainment seven days a week is a compelling draw at the stunning U-shaped piano bar highlighted by its openable floor-to-ceiling windows.

THE PATIO WOW FACTOR: The show-stopping wraparound patio overlooks Santa Monica Boulevard. Here too is a variety of plants in long planters and the pièce de résistance is the Living Wall, which can be seen from the boulevard. Its 112-square-feet features 36 living wall modules containing a combination of hearty edible plants and a variety of ground covers, ferns and grasses used for restaurant decorative purposes. The patio offers comfortable furnishings, a water feature and a Sharing Table with fire features making it a perfect destination for relaxation and casual dining enjoyment.

AND THERE’S MORE: For business functions and special occasions, the Napa and Sonoma rooms’ flexible private dining spaces are fully equipped with state-of-the-art audiovisual equipment and other user-friendly features. This new concept-driven venue (no dish contains over 475 calories) brings healthy seasonal dining, an award-winning international wine list, signature cocktails and premium-crafted drinks along with live entertainment nightly at a convivial piano bar to this dynamic, well located Golden Triangle hub.

NICK + STEF’S Steakhouse Announces the Return of the Popular Summer Series “Girl and a Grill” with an added Guest Bartender Night and BBQ Classes

Nick & Stef’s Steakhouse, downtown Los Angeles’s modern California steakhouse, is back once again with the popular “Girl and a Grill” patio dining series with Executive Chef Megan Logan running from June 1 to August 31, 2012. New to this second annual series are a guest bartender program and BBQ classes alongside the mainstay feature of outdoor grilling.

Every Thursday, Nick + Stef’s al fresco lounge will play host to a series of rotating bartenders whose “grilled” cocktails will be debuted that night and offered the following week. Familiar faces of the downtown, sports arena, and cocktail communities are set to make appearances. Patrons are encouraged to visit the Nick + Stef’s facebook page weekly for updates on featured guest bartenders.

On Fridays, the celebration of all things grilled will continue when Executive Chef Megan Logan steps out of the kitchen and onto the patio, offering an interactive grilling experience. Utilizing prime cuts of meat, Logan’s weekly rotating dishes will include items such as tri-tip, skirt steak, ribs, chicken breast, barbeque shrimp, grilled oysters, and flat iron steak with prices ranging from $8-20. To accompany the grilled meats, the veteran chef will offer a selection of grilled seasonal salads and sides available for $5 each. Logan’s expertly crafted summer comfort dishes can be enjoyed on the restaurant’s patio, where there will be free live entertainment weekly.

Fans of the ongoing Meat 101 series can add a few more dates to their calendar. In conjunction with “Girl and the Grill,” Chef Megan Logan will be offering two additional classes on July 13th and August 10th. These exclusive nights will focus on BBQ techniques and Chef Logan’s personal tips on creating memorable outdoor grill nights at home. Patrons who wish to attend are encouraged to reserve a spot by contacting the restaurant directly.

Oui, oui” or “yes, more please” is what diners will be saying after savoring the newly inspired French dishes at Kendall’s Brasserie. To the delight of Angeleans, downtown Los Angeles is really stepping up dining experiences and one such delight is Patina Restaurant Group’s Kendall’s Brasserie at the Los Angeles Music Center. Returning to his French-fare passion, Executive Chef Jean Pierre Bosc takes the helm at this downtown favorite after 12 successful years as owner and Executive Chef of Mimosa and Cafe’ des Artistes.

While Chef Bosc will continue to provide diners with the authentic brasserie cuisine they have come to love since Chef and Founder Joachim Splichal first introduced Kendall’s Brasserie to his well-admired Patina restaurant portfolio in 2003, Bosc enhances the menu through the blending of Parisian and regional Southern French dishes influenced by his childhood near Lyon.

On the menu, begin your relaxing Parisian experience with a flavorful, very “bikini” salad of Fresh Green Bean with Avocado. Not to be outdone are tantalizing entrees, among my personal favorites is the Maple Leaf Farm duck breast with red wine poached pear. So delicious and incredibly healthy with a celery root puree, this artful dish is palate pleasing in perfect portion.  Fresh seafood dishes do not disappoint. Topping the list is Slowly Baked Barramundi with Saffron Potato and Green Asparagus, Lobster Linguini, and Grilled Atlantic Salmon with Shallot Herb Vinaigrette. Chef Bosc’s unique French style shines in Kendall’s Classics including Moules Frites of steamed mussels with Dijon mustard in white wine broth, Rotisserie Chicken with green beans, pommes frites maison and caramelized cipollini onion sauce, and for heartier appetites, Sage Farm Natural Pork Chop with Apple Glazed Bacon Braised Brussels Sprouts. Bosc is incorporating exciting selections in the rotating Plat du Jours which features an authentic Bouillabaisse Marseillaise with clams, mussels, market fish, shrimp, rouille and croutons, menu plates of Beef Filet Mignon with fleur de sel, short rib provencal daube, marrow bone “a la coque”, market vegetables and peewee potatoes; Cod brandade cake with piquillo pepper coulis, fennel and arugula; and the Riviera Fish Soup with rouille and croutons. The new menu at Kendall’s Brasserie is highlighted by the introduction of house-made charcuterie, pork and duck rillettes, Chef’s pate des copains, and artisanal cheese selections.

Each hand-selected fish on the menu contains heart healthy omega-3 fatty acids which are known to decrease blood pressure, help prevent blood clots, and they help keep skin looking younger ~ perfect for Los Angeles patrons. Gourmet dining at it’s guilt-free, most “bikini” best, has never tasted better.

HALIBUT & SCALLOP TARTARE Served immersed in a bed of blue ice, the freshest halibut and scallops are tossed with lime, sea salt, and a hint of olive oil. Mouth watering, light and healthy. Halibut has a naturally firm, white flesh that is slightly sweet. A large fish weighing in at up to over 600 pounds, halibut will put no pounds on your hips as this fish is low in calories, low in fat and high in protein. Combined with heart healthy scallops, a great way to start your meal.

KING SALMON MI-CUIT RAVIOLI Translucent ravioli are filled with luscious King Salmon tapenade, fresh tomato, Meyer lemon, and refreshing basil oil. King Salmon is one of the healthiest fish you can enjoy as it brings strength to your muscles, repairs heart damage, and helps lower blood pressure.
