FIVE CROWNS HAS A NEW LOOK!

Five Crowns

Five Crowns bold new look

An Orange County landmark for over 50 years, Five Crowns restaurant and bar recently unveiled bold, new interior and exterior renovations.
Five Crowns is pleased to unveil the completion of the interior, exterior renovations and new Cooper’s Bar.  The renovations began in 2015 as part of the landmark restaurant’s yearlong 50th anniversary celebration.  The major revitalization, which includes the addition of the new Cooper’s Bar, honors the Five Crowns legacy while opening a new door to a bright future.

“We’ve invigorated the Five Crowns experience,” said Ryan O’Melveny Wilson, Executive Chef and Vice President. “From our updated sign out front, to refreshed dining rooms, the new bar and a menu that honors our classics and highlights seasonality, we’re setting the table for the next 50 years.”

Five Crowns collaborated on the renovation plans with Hatch Design Group, YYES Design Studio, Robertson Hill Architecture and Roger’s Gardens.

The first phase of changes focused on a new landscape design, re-imagined branding and the traditional façade. A second renovation phase included dramatic changes to the interior.

Lush landscaping by Roger’s Gardens highlights the historic building’s English theme. Topiaries and boxwood hedges surround the property. A large, raised vegetable bed and aromatics including lavender, rosemary and sage embellish the front. Citrus trees enhance the back garden for outdoor dining and special events.

The eye-catching sign on Pacific Coast Highway features a bold new Five Crowns logo. While the iconic red telephone booth remains, the building’s exterior now showcases a multicolor palette, including a distinctive red stripe with metallic gold lettering painted above the windows and doorway.

The relocated entrance, with a larger front door, opens to a redecorated reception area that offers a direct sightline to the restaurant’s most striking addition: its vibrant new showpiece, Cooper’s Bar in the Greenhouse. Named for Chris Cooper, much loved co-worker and Lead Service Bartender for 42 years, this handsome, inviting bar features a stunning copper beer tower with rotating taps. Lively plaid barstools provide comfortable seating around a grand communal table whose surface is covered with thousands of authentic English shillings.

Custom designed, oversized glossy red benches add a touch of whimsy to the Greenhouse dining space enhanced with new chandeliers and side chairs. The sky lit room’s once green metal framework has been painted a deep, rich gray.

Vivid paint colors, eclectic wallpapers and fabrics as well as new flooring refresh the Main, Nelson and Crown dining rooms. Notably, custom hardwood tabletops replace the traditional white tablecloths. Cozy fireside nooks and antique British artifacts continue to be central to Five Crowns’ unique atmosphere.

Complementing the renovation, Five Crowns’ forward-looking menu balances innovative seasonality with the classic dishes that have made the restaurant a landmark. Guests can now enjoy greater flexibility by pairing seasonal small plates with a shared main dish or a heritage entrée from the Crown Classics section.

“The new menu offers favorites from our 50-year menu archives in addition to a daily selection of fresh fish, hand cut pasta and interesting wines,” commented Wilson. “There is something for every discerning palate, long-time guest or first time Five Crowns diner.”

Celebrity Cruises Presents A Taste of Film

Celebrity Cruises A Taste of Film

CELEBRITY CRUISES CELEBRATES ITS LATEST ONBOARD DINING AND MOVIE EXPERIENCE WITH ‘A TASTE OF FILM’ CULTURAL-CULINARY EXPERIENCE AT THE RECENT NEWPORT BEACH FILM FESTIVAL

The historic Port Theater was the sumptuous backdrop to an afternoon of perfectly paired film and food prepared by Award-Winning Chef Pascal Olhats. Once again, Celebrity Cruises breaks new ground by bringing its latest onboard experience to land. The modern cruise brand’s new “A Taste of Film” launched with a special “sailing” at the recent Newport Beach Film Festival held April 21-28, 2016.

Celebrity Cruises Taste of Film

Rooftop Terrace for Taste of Fim

Now, guests onboard Celebrity’s ships can experience a multi-sensory journey in the ships new Rooftop Terrace where passengers enjoy a specific cultural, culinary or destination-based film, while dining on exquisite cuisine that brings the movie’s scenes to life through guests’ taste buds. Onboard, the specially crafted, multi-course tasting menu for “A Taste of Film” is designed by Michelin-starred chef Cornelius Gallagher, Associate Vice President, Food and Beverage Operations, Celebrity Cruises.

To celebrate this exciting culinary and film addition to Celebrity’s top ships, Celebrity Cruises hosted a screening of “The Hundred-Foot Journey,” a film that tells the story of a feud between two adjacent restaurants in a French town: one operated by a recently relocated Indian family and the other a Michelin-starred French restaurant. To enhance the film viewing experience and to simulate what passengers will be enjoying onboard, guests savored eight courses prepared by award-winning Chef Pascal Olhats, Chef/Owner Pascal Restaurant, Café Jardine and Pascal Catering. The menu, which guests will enjoy throughout the film, is inspired by the acclaimed film’s French and Indian cuisines. Each course was perfectly paired with fine wines from Jackson Family Wines.

“A Taste of Film activates all the senses to create a fully immersive and transportive experience,” said Scott Clifton, Director of Sales, Western Region. “We launched with ‘The Hundred-Foot Journey’ because it emphasizes – through both story and visuals – the power of food to bring people together, and to evoke memories.”

Among the menu items delightfully prepared by Chef Pascal Olhats:

Course #1: Warm lobster bisque with uni and spices served when the Kadam family’s restaurant in India burned down and the mother Haddam dies.
Scene Details: As a child, Hassan Kadam regularly goes to market to buy uni for his parents’ restaurant and his mom taught him how to cook and to appreciate uni in the broth she would make.

Course #2: Pate and cheese on artisan bread
Scene Details: When the Kadam family moves to London, then to France where their van breaks down, a young French woman (a sous chef named Margaurite) rescues them and serves them cheese and pate, bread and vegetables from her garden. The family soon opens an Indian restaurant called Maison Mumbai across the street and 100 feet from a 1 Michelin star French restaurant run by Helen Mirren (Madam Mallory) called Le Saule Pleureur. There are continuous fights between the Kadam dad and Madam as cultures and cuisines clash.

Course #3: Curried marsala chicken with naan bread
Scene Details: Hassan’s father gives him his deceased mother’s prized spice rack. His dad says “food is memories.”

Course #4: Barbecue sweet corn with béchamel
Scene Details: Hassan masters the 5 sauces basic to any classic French cooking (bechamel, veloute, tomat, espagnole, mayonnaise). Margaurite explans that Madam interviews potential chefs by having them make an omelette for her.

Course #5: Baked breast of quail with truffle sauce and fine herb omelette
Scene Details: Hassan is offered a 6 month apprenticeship at Madam’s restaurant after he makes her a baked breast of quail dish like what she serves in the restaurant (which she pretends to hate). During the competition between the 2 restaurants, the head chef at Madam’s restaurant sets Maison Mumbai on fire and Haddam’s hands get burned. He can’t use them, but asks Madam if he can make an omelette for her with her help. So she does, following his instructions to add Indian spices; she loves it.

Course #6: Mushroom veloute with coriander and boeuf bourguignon with special spices
Scene Details: Le Saule Pleureur gets its 2nd Michelin star and Hassan masters boeuf bourguignon

Course #7: Special plate with Indian delights (garbanzo beans, Indian puff pastry)
Scene Details: Served after Hassan moves to Paris and is one of the hottest chefs on the scene but one night eats Indian food with a fellow restaurant employee and gets homesick

Course #8: Chocolate truffle and fruit tartelette
Scene Details: Everyone lived happily ever after!

Celebrity Cruises

A Taste of Film is available onboard Celebrity Infinity and Celebrity Summit and will arrive onboard Celebrity Millennium in May 2016, when the ship emerges from a brief refresh drydock. Along with the new Rooftop Terrace, complete with its large screen, lounges, cabanas, soundscape and decorative lighting, additional drydock enhancements include a significant refresh of the ships’ Penthouse and Royal Suites, and the conversion of both the Normandie and The Olympic specialty restaurants to one of Celebrity’s signature dining venues, Tuscan Grille, which will offer a new, modern experience.

  • Next Generation Cult Cabernets (Saturday, August 29, 11am-12:15pm): Is cult cab dead?  Despite the rough economic waters that have indubitably changed the wine market, purveyors of “perfect” cabernet sauvignon still have a critical role to play on the international stage.
  • The World of Super Tuscans (Saturday, August 29, 4:30pm-5:45pm): When a Typical Regional Wine (IGT – Indicazione Geografica Tipica) is of such spectacular quality that the term ‘typical’ just does not fit, enter The SUPER TUSCANS. A Super Tuscan is the final expression of quality and skill of winemaking of a wine producer and his enologist. While a vertical of several vintages of one such wine is a much desired experience, Los Angeles Food & Wine has decided to make this occasion extra special by bringing them ALL to the table at once.
  • Krug Champagne & Black River Caviar (Sunday, August 30, 11am-12:15pm): Legendary Champagne Krug paired with a decadent tasting of Black River Caviar. Luxury epitomized, this is THE event to attend for anyone who loves champagne and caviar, its parallel in extravagance.

Hollywood Bowl 2015 Season Opens June 20th!

Hollywood Bowl 2015 Season Opens June 20th!
Journey, Gustavo Dudamel at the Hollywood Bowl

Since moving to the Los Angeles area nearly 25 years ago, the Hollywood Bowl has been one of my favorite places to take in each Summer. When I say “take in”, that’s what you do at “The Bowl”. Whether it’s the concerts, the food, the wine, or the sheer romanticism of the “Bowl”, the Hollywood Bowl is a place for everyone to enjoy. From celebrities to out-of-towners and locals alike, did you know that the Hollywood Bowl is also one of California’s State Parks? YES, it is! It’s open to the public. Read on for more…

During the day, and depending on the celeb quotient of the performer that night, regular folk can run the stairs at the Bowl, enjoy a private picnic, or just sit quietly and soak it all in during a morning meditation. It’s always been true that the Hollywood Bowl offers something for everyone, even those of a younger audience, but knowing that it is part of the California State Parks is special. Being a State Park means that it is truly welcoming to each and all including Girl Scouts, Boy Scouts, school groups, and more and is not left to concert goers.

The great news for concert goers is that the Hollywood Bowl is stepping up their game season after season. Not just with iconic musical performances – like their alliance with the famed band, Journey, this year – but with food that will make your tastebuds go “wow” with tapas, sushi, picnic fare, and now introducing gluten-free and vegan fare for diners. The menus at the Bowl are created and prepared by the well-established and super well-respected Patina Restaurant Group, helmed by Executive Chef Joachim Splichal. A bit shy for the camera, you won’t catch the loveable and likeable Chef Joachim at many events but you can guarantee his staff represents and delivers the best his menus have to offer.

What’s happening this season at the Bowl? Let’s start first with the music, saving the food highlights for later in this article.

BT McNicholl will direct. Spamalot will be conducted by Todd Ellison and choreographed by Scott Taylor. Eric Idle, who wrote the book and lyrics and is co-composer of Spamalot – and who is a member of Monty Python – said, “To celebrate ten years since Monty Python’s Spamalot opened on Broadway and won the Tony for Best Musical of the Year I am proud to join a hand-picked cast of seriously funny people for three nights of fun at my favorite venue: The Bollywood Hole.”

Merle Dandridge has appeared on Broadway in a variety of roles including Kala in Tarzan, The Lady of the Lake in Spamalot, Joanne in Rent and the title role in Aida. Her TV roles include NBC’s The Night Shift and FX’s Sons of Anarchy. Last fall, Dandrige starred as Kate in Kiss Me, Kate with Wayne Brady at The Pasadena Playhouse.
Warwick Davis portrayed Professor Filius Flitwick in the Harry Potter film series and starred in the HBO series Life’s Too Short, created by himself, Ricky Gervais and Stephen Merchant. Davis played the role of Patsy in the West End production of Spamalot. He will be appearing in the highly anticipated Star Wars: Episode VII – The Force Awakens.

Jesse Tyler Ferguson is a five-time Emmy nominee, best known playing Mitchell Pritchett on ABC’s Modern Family. His Broadway credits include Leaf Coneybear in the original cast of The 25th Annual Putnam County Spelling Bee and Chip in the 1998 revival of On the Town. Ferguson starred in the Hollywood Bowl’s production of The Producers in 2012.
Eric Idle is a member of the groundbreaking comedy troupe Monty Python, whose iconic films include Monty Python and the Holy Grail, Life of Brian and The Meaning of Life. He is an accomplished songwriter and wrote many of Monty Python’s best-known songs, including “Always Look on the Bright Side of Life.” In addition to writing the book and lyrics for Spamalot, as well as co-writing the music with John Du Prez, Idle has also written novels, a play, and a children’s book. His lyrics for Spamalot won him the Drama Desk Award for Outstanding Lyrics in 2005.
Craig Robinson portrayed the beloved character, Darryl Philbin, on all nine seasons of NBC’s hit show The Office. His film roles include This is the End, Get On Up, Hot Tub Time Machine, and Hot Tub Time Machine 2. His new show, Mr. Robinson, will premiere later this summer on NBC.

Director BT McNicholl was recently named the Producing Artistic Director of the Palace Theatre in Stamford, Connecticut. He has been on the creative teams of a dozen Broadway plays and musicals including Billy Elliott: The Musical, Cabaret and A Funny Thing Happened on the Way to the Forum, with mentor directors Sam Mendes, Rob Marshall, Stephen Daldry, Jerry Zaks, James Lapine, and Mike Nichols. He wrote the book and lyrics for the successful musical The It Girl and is a BMI-Award winning lyricist. Regionally, his production of West Side Story won the 2014 Moss Hart Award. Internationally, he won the Helpmann Award (the Australian “Tony”) for Best Direction and staged the European premiere of The Producers for Stage Entertainment.

Todd Ellison, conductor, is currently the music supervisor/conductor for the new Broadway musical, An American in Paris. His other Broadway credits include Annie, Spamalot, La Cage aux Folles and 42nd Street. He was also the musical director of the Radio City Christmas Spectacular for several seasons and worked as Marvin Hamlisch’s musical director on Ballroom and The Nutty Professor.

Scott Taylor, choreographer, was on the creative teams of several Broadway musicals including Aladdin, On a Clear Day You Can See Forever, A Little Night Music and Spamalot. He was also the dance captain for the original Broadway production of Spamalot.

Monty Python’s Spamalot tells the legendary tale of King Arthur and the Knights of the Round Table and their quest for the Holy Grail. The show features lusty maidens, dancing divas, a killer rabbit and a legless knight. It has been honored with dozens of awards, including the Grammy for Best Original Cast Recording and three Tony Awards, including Best Musical.

Monty Python’s Spamalot will have three performances at the Hollywood Bowl this summer – Friday, July 31, at 8 PM, Saturday, August 1, at 8 PM and Sunday, August 2, at 7:30 PM.

Single tickets for the 2015 Hollywood Bowl season go on sale Sunday, May 3, at 10 AM. Tickets can be purchased in-person at the Hollywood Bowl box office. One of the largest natural amphitheaters in the world, with a seating capacity of nearly 18,000, the HOLLYWOOD BOWL has been the summer home of the Los Angeles Philharmonic since its official opening in 1922, and plays host to the finest artists from all genres of music. It remains one of the best deals anywhere in Los Angeles; to this day, $1 buys a seat at the top of the Bowl for many classical and jazz offerings. The venue offers something for everyone, from its sizzling summer evening concerts to the daytime arts festival for children, “SummerSounds: World Music for Kids at the Hollywood Bowl,” now in its 48th season. In February 2015, the Hollywood Bowl was named Best Major Outdoor Concert Venue for the eleventh year in a row at the 26th Annual Pollstar Concert Industry Awards.

Herbie Hancock continues at the Bowl:

The Los Angeles Philharmonic Association announced today a one-year extension to Herbie Hancock’s contract as the William Powers & Carolyn Powers Creative Chair for Jazz through the Hollywood Bowl 2016 season and the 2016/17 winter season at Walt Disney Concert Hall. Hancock’s tenure began in the summer of 2010 and under his guidance the Los Angeles Philharmonic has presented notable jazz programs with both legends and breakthrough artists of the genre, including Esperanza Spalding, Cecile McLorin Salvant, Dee Dee Bridgewater, Dianne Reeves, Bobby McFerrin, The Neville Brothers, Quincy Jones, Hugh Masekela and many more. The upcoming seasons present equally diverse concerts with artists that include Jamie Cullum, Wayne Shorter, Orquesta Buena Vista Social Club, Trombone Shorty, Chick Corea, Jazz at Lincoln Center Orchestra with Wynton Marsalis, Billy Childs, José James, Aloe Blacc, and Ledisi, among many others.

“I am truly grateful to continue working with the Los Angeles Philharmonic, and further build upon our shared commitment and dedication to the jazz genre,” says Hancock. “Together, we will continue to create more unforgettable musical experiences for today’s jazz artists and audiences.”

Gustavo Dudamel returns…

Now in his sixth season as Music & Artistic Director of the Los Angeles Philharmonic, Dudamel’s contract has been extended through 2021/22. Under his leadership the Los Angeles Philharmonic has expanded its diversified outreach through many projects, most notably Youth Orchestra Los Angeles (YOLA), influenced by Venezuela’s widely successful El Sistema. With YOLA and additional educational expansion in Los Angeles, Gustavo brings music to children in the underserved communities of Los Angeles, and also serves as an inspiration for similar efforts throughout the United States, as well as for programs in Sweden (Hammarkullen) and Scotland (Raploch).

Gustavo Dudamel is one of the most decorated conductors of his generation. He received 2014’s Leonard Bernstein Lifetime Achievement Award for the Elevation of Music in Society from the Longy School, was named Musical America’s 2013 Musician of the Year, one of the highest honors in the classical music industry, and in 2013 was voted into the Gramophone Hall of Fame. In 2009, Dudamel was named one of Time magazines Top 100 Most Influential People.

Hollywood Bowl Youth Outreach Programs:

“An orchestra means joy, motivation, teamwork, the aspiration to success. It is a big family dedicated to harmony.” — José Antonio Abreu, Founder of El Sistema

Youth Orchestra Los Angeles:

Youth Orchestra LA (YOLA) is the Los Angeles Philharmonic’s initiative to provide access to free, high quality instrumental and orchestral education in order to promote youth development. Central to YOLA is the Los Angeles Philharmonic’s plan to build, with community partners, youth orchestras in underserved communities throughout Los Angeles. YOLA families are engaged in making music themselves while supporting their children’s development, with the vision that YOLA neighborhoods become vibrant centers of musical culture with a deepened sense of community. YOLA is inspired by El Sistema, the Venezuelan music education system that nurtured the Los Angeles Philharmonic’s Music Director, Gustavo Dudamel.

Other programs include the LA Philharmonic Student Insiders, Composer Fellowship Program, Dudamel Fellowship Program, Symphonies for Youth, World Music and Art for Kids and more programs for youth in music education in schools.

Zimzala Restaurant and Bar – Deliciously Free-Spirited

Zimzala Restaurant and Bar – Deliciously Free-Spirited

Huntington Beach is home to the swanky boutique hotel, The Shorebreak Hotel. A delightful place to relax and revive for stay-cay locals and worldwide travelers alike, The Shorebreak Hotel is just steps from the beach.
Chef Brian Drosenos

On a recent visit, I had the pleasure of dining at the hotel’s signature restaurant, Zimzala Restaurant and Bar, which represents everything free-spirited and that “sand between the toes” feeling which I will call “whimsical”. Helmed by Executive Chef Brian Drosenos, Zimzala offers much more than just “comfortable California cuisine”. Chef Drosenos brings a rich and flavorful culinary history to Zimzala having earned his chops at restaurants such as LA Live’s JW Marriott and Ritz-Carlton, Noble House and The Ventana Inn and Spa. When I asked Chef what Zimzala-like element he brought to the menu, he replied, “I enjoy a free-spirited presentation of the foods.” Yet, I found the dishes themselves to be of equally delicious, creative whimsy.
Zimzala tasting menu
For starters, a soup of roasted cauliflower with crispy Brussels, finely chopped Marcona almonds, golden raisins, and focaccia croutons was presented in an artful white bowl. And, when served, a whimsical swirl of lemon oil graced the top to add that perk of tartness that pleases the palate. Make this delicious soup at home, view my version of the recipe here: Roasted Cauliflower Soup

Roasted Cauliflower Soup with Lemon Oil drizzle
Quite possibly my favorite dish of the day was the Marinated Pepper Salad which was a finely chopped array of yumminess of marinated baby bell peppers, kale tossed with roasted pistachios, roasted garlic, feta cheese and a sherry vinaigrette. Refreshing and light, I could eat this salad everyday as it is not only delicious, it is filled with food healing ingredients – bell peppers, kale, garlic, and pistachios.
Marinated Pepper Salad
Have you ever had charred octopus? Neither had I. Giving way to that Zimzala “sand between the toes” whimsical experience, the whimsy here was not only enjoyed in Chef’s presentation but in the food, too! Chef Drosenos explained the baby octopus is braised first and then charred with paprika giving it a tenderness that is not often found when eating octopus. The char totally works in this earthy dish that gets another flavor boost from espilite chili peppers from Spain, smoked potatoes, kalamata olives, lightly fried capers, and a housemade romesco sauce that has nuts, olive oil and sherry vinegar. Smokey is the flavor here as the peppers from Spain are naturally smokey and the potatoes are smoked. I give this dish a smoking hot two bikinis up for the whimsy alone… the flavor, a bonus.
Paprika Charred Octopus
You would think I would be full by now and on most days I would but today’s tasting menu had me curious so I continued with the Porcini Mushroom Spaghetti. House made spaghetti noodles get their porcini-ness from porcini powder. I must get some. Then, the noodles are cooked al dente and tossed with an incredible medley of mushrooms that include brown beech and pink trumpet – I love everything pink. Also in the mix, a medley of herbs among them chervil, chives, tarragon, and dill. Finish with fresh lemon, grana padano, and a cured egg yolk, Chef fully got his whimsy on here.

Porcini Mushroom Pasta
Being a ocean view restaurant, fish is an integral part of the menu. I was delighted when salmon arrived. Pan Roasted Salmon with eggplant purée, bloomsdale spinach, roasted fennel, roasted tomato, and black olive caramel made with burnt sugar. Wow! That pretty much sums it up.
Pan Roasted Salmon
Now, normally I would skip dessert but the Chef insisted by surprising me – and the other guests – with a Persimmon Panna Cotta. The highlighted ingredient, persimmon, was served with an abundance of flavors and textures. Date and walnut bread whipped cream. Toasted pepitas and pecans. A hint of micro basil completed the dish and what a whimsically divine dining experience.
Persimmon Panna Cotta
To say Chef Drosenos’ cuisine and Zimzala was a surprisingly palate pleasing experience is an understatement. Although I have been a fan of The Shorebreak Hotel since it opened, I had never had the pleasure of dining at their premiere restaurant. I half anticipated just another beachy restaurant experience which is not all bad but not whimsically amazing. To my surprise, Zimzala, under the direction of Chef Drosenos, is far better and beyond being a beachy restaurant. Producing high quality, delicious food that is artfully presented in a free-spirited style, Chef Drosenos brings a bit of gourmand and then some.
