The historic Port Theater was the sumptuous backdrop to an afternoon of perfectly paired film and food prepared by Award-Winning Chef Pascal Olhats. Once again, Celebrity Cruises breaks new ground by bringing its latest onboard experience to land. The modern cruise brand’s new “A Taste of Film” launched with a special “sailing” at the recent Newport Beach Film Festival held April 21-28, 2016.

Now, guests onboard Celebrity’s ships can experience a multi-sensory journey in the ships new Rooftop Terrace where passengers enjoy a specific cultural, culinary or destination-based film, while dining on exquisite cuisine that brings the movie’s scenes to life through guests’ taste buds. Onboard, the specially crafted, multi-course tasting menu for “A Taste of Film” is designed by Michelin-starred chef Cornelius Gallagher, Associate Vice President, Food and Beverage Operations, Celebrity Cruises.

To celebrate this exciting culinary and film addition to Celebrity’s top ships, Celebrity Cruises hosted a screening of “The Hundred-Foot Journey,” a film that tells the story of a feud between two adjacent restaurants in a French town: one operated by a recently relocated Indian family and the other a Michelin-starred French restaurant. To enhance the film viewing experience and to simulate what passengers will be enjoying onboard, guests savored eight courses prepared by award-winning Chef Pascal Olhats, Chef/Owner Pascal Restaurant, Café Jardine and Pascal Catering. The menu, which guests will enjoy throughout the film, is inspired by the acclaimed film’s French and Indian cuisines. Each course was perfectly paired with fine wines from Jackson Family Wines.

“A Taste of Film activates all the senses to create a fully immersive and transportive experience,” said Scott Clifton, Director of Sales, Western Region. “We launched with ‘The Hundred-Foot Journey’ because it emphasizes – through both story and visuals – the power of food to bring people together, and to evoke memories.”

Among the menu items delightfully prepared by Chef Pascal Olhats:

Course #1: Warm lobster bisque with uni and spices served when the Kadam family’s restaurant in India burned down and the mother Haddam dies.
Scene Details: As a child, Hassan Kadam regularly goes to market to buy uni for his parents’ restaurant and his mom taught him how to cook and to appreciate uni in the broth she would make.

Course #2: Pate and cheese on artisan bread
Scene Details: When the Kadam family moves to London, then to France where their van breaks down, a young French woman (a sous chef named Margaurite) rescues them and serves them cheese and pate, bread and vegetables from her garden. The family soon opens an Indian restaurant called Maison Mumbai across the street and 100 feet from a 1 Michelin star French restaurant run by Helen Mirren (Madam Mallory) called Le Saule Pleureur. There are continuous fights between the Kadam dad and Madam as cultures and cuisines clash.

Course #3: Curried marsala chicken with naan bread
Scene Details: Hassan’s father gives him his deceased mother’s prized spice rack. His dad says “food is memories.”

Course #4: Barbecue sweet corn with béchamel
Scene Details: Hassan masters the 5 sauces basic to any classic French cooking (bechamel, veloute, tomat, espagnole, mayonnaise). Margaurite explans that Madam interviews potential chefs by having them make an omelette for her.

Course #5: Baked breast of quail with truffle sauce and fine herb omelette
Scene Details: Hassan is offered a 6 month apprenticeship at Madam’s restaurant after he makes her a baked breast of quail dish like what she serves in the restaurant (which she pretends to hate). During the competition between the 2 restaurants, the head chef at Madam’s restaurant sets Maison Mumbai on fire and Haddam’s hands get burned. He can’t use them, but asks Madam if he can make an omelette for her with her help. So she does, following his instructions to add Indian spices; she loves it.

Course #6: Mushroom veloute with coriander and boeuf bourguignon with special spices
Scene Details: Le Saule Pleureur gets its 2nd Michelin star and Hassan masters boeuf bourguignon

Course #7: Special plate with Indian delights (garbanzo beans, Indian puff pastry)
Scene Details: Served after Hassan moves to Paris and is one of the hottest chefs on the scene but one night eats Indian food with a fellow restaurant employee and gets homesick

Course #8: Chocolate truffle and fruit tartelette
Scene Details: Everyone lived happily ever after!

Event organizers, Les Ecuries d’Ecaussinnes (EEM and translated, The Stables of Ecaussinnes), are excited to announce the addition of the Steffen Peters Dressage Demonstration as part of the The Longines Masters of Los Angeles program in October. Spectators can enjoy Steffen Peters Dressage Demonstrations on Friday, October 2nd and Saturday, October 3rd. He will be explaining the sport, approach, and movements of dressage followed by a Kur Grand Prix Freestyle live demonstration to give guests a sense of dressage competition.

One of the greatest riders of all time, Great Britain’s John Whitaker, just celebrated his 60th birthday and has been confirmed as a competitor in the American leg of this three continent competition. Whitaker returned to victory this past February at the Longines Masters of Hong Kong which is the first competition leg of the three in the Masters Grand Slam. Whitaker clinched a 5-star Longines Grand Prix win with his horse, Argento, whom he has trained himself since he was young.

Summer Camp Program: 
Want to improve your golf game and have fun this summer? GNCGA’s summer camp is for you! GNCGA offers weekly and multi-week training camps for boys and girls ages 8-21. Summer camp is great because it gives one the same experience as our full-time high school and post-graduate students. Summer camp begins in May!
Full Time Program: 
Focus on your education and improve your golf skills all in 10 months! The full time program starts in August and ends in May. It provides the most talented junior golfers in the U.S. and abroad with an instruction program and training environment. We partner with K12 that is the leader in online learning and also partner with Lowcountry Prep School that is an excellent academic experience.
Post-Graduate Program: 
This program was designed to prepare young players, ages 17-21, for collegiate golf and beyond. It gives one and extra year to improve their golf game in order to compete effectively on the collegiate level without losing a year of eligibility. This program starts in August and ends in May.
Adult Golf Program: 
If your chance to play professionally has passed you by, doesn’t mean you can’t be a professional here at GNCGA! We appreciate your desire to increase your enjoyment of the game! GNCGA’s adult program will include 1, 2, and 3-day golf schools and all aspects of the game will be offered.

If Newport Beach is not your spook-tacular locale of the night OR, if you are ready for a “two-party” Halloween evening, head just a few miles south to the newly opened Tortilla Republic Laguna Beach where Executive Chef Chris Tzorin and his team are hosting the first-ever “Boo Ball” complete with spooky-yet-tasty fare:

With ocean views and breezes from nearly every seat in the house, Tortilla Republic Laguna Beach hosts its Inaugural Boo Ball. Offering a costume contest at midnight and an “Adult trick or treat” and photo booth all night long beginning at the eerily hour of 8pm.

From 8 p.m. to 2 a.m., Tortilla Republic will provide a Boo Bites menu, which includes Seared Albacore Tuna Bites with ancho Chile crusted, mango & radish slaw, avocado, and salted chili lime; Huarache de Hongos Bites with crispy corn flatbread, cremini & oyster mushrooms, roasted shallots, baby arugula, and Monterey Jack & Manchego cheese; TR Boo Sliders with three mini hamburgers featuring premium American Wagyu beef, roasted poblano, caramelized onion, chipotle aioli, watercress, and sweet potato fries with cilantro & lime zest; and Prime Tenderloin Steak Taco with fajita rub, salsa de mesa, and tequila slaw.

Whether a one-party, two-party, or group night out event, please don’t drink and drive. Call Uber, have a friend drive, hire a limo for the night, dress up and let someone else do the driving. Spooky-fun is fantastic. Anything else… not worth it. Safety first, fun second!
